Sepu Vadi is a famous Himachali dish. It is a special dish made in Himachal on the occasion of weddings as well as other normal days. It can be prepared easily at home. It is very nutritious as well as tasty because it is made of protein rich split black gram lentils (Urad dal). Except Himachal Pradesh, this dish is not that much popular in the other provinces of the country.
INGREDIENTS
Urad dal (5 to 6 hours wet) – one Cup, Spinach – 100 g, Grated ginger – 2 tsp, Green Chili – 3 nos, Lemon juice – 1/2 tsp, Pinch filled Eno, Onions – 1 nos, Grated garlic – 2 nos, Tomato grated – 2 nos, Yogurt – 1/2 Cup. Red chilli, cumin powder, coriander powder – 1/4 tsp each, Turmeric fennel powder – 1/2 tsp each, Black pepper powder – 1/2 tsp, Sharp leaf – 1 nos, Clove cardamom – 4 nos, Cinnamon – 1, Oil for frying and Salt to taste.
How to prepare Sepu Vadi
Firstly, grind the wet Urad dal, ginger and green chilli in the mixer. Then add the lemon juice and Eno into it. Then lubricate one pan with the oil and put this mixture into it. Now boil the water in a separate pan for cooking the mixture in the steam. Then the pan of mixture is covered and put into the boiled water. After cooking in steam for about 15 minutes, remove the mixture pan from the boiled water and leave it for some time till it cools down. Now the mixture (Vadi) becomes hard and it can be chopped in different shapes. Then the pieces of Vadi mixture are fried in the heated oil till it becomes crispy. Then put the spinach in water and boil it for 2 minutes in a different utensil. Then chop and grind the soft spinach in the mixer to make its puree.
Now heat oil in the separate pan and add the cumin seeds for 1 minute. Then cook the mixture of grated onion, ginger and garlic for 3 minutes on a low flame. After that, turmeric, coriander, cumin powder, red chili powder along with tomatoes are inserted into it. After frying the spices well, add the spinach puree into the pan. Then the black pepper powder and fennel powder are added and roasted for 1 minute. After cooking curd for some time in the pan, the fried vadi is added into the mixture and is cooked for a few minutes. Then add water into the pan and cook the mixture for 5 to 7 minutes. This is the way to prepare healthy and tasty Sepu vadi. It is served with chapatis and rice.
